Directions
- Heat BlueStar oven to 400°F. Brown ground beef deeply in the de Buyer Country Fry Pan, breaking it into bite-size pieces; remove excess fat if necessary. Add onion and carrots and cook until beginning to soften. Add garlic and tomato paste and cook briefly until fragrant and the tomato paste darkens slightly. Sprinkle flour over the mixture and cook about 1 minute while stirring. Gradually add beef stock and Worcestershire sauce, stirring and scraping up browned bits. Add thyme, salt, and black pepper and simmer until the filling thickens. Fold in frozen peas. Transfer to a baking dish if needed. Spread prepared mashed potatoes generously over the beef filling all the way to the edges. Rough up the potato surface with a fork to create peaks that will brown. Brush with melted butter. Bake until the filling is bubbling and potato peaks are deeply golden, generally 25 to 30 minutes. Rest 10 minutes before serving so the filling sets slightly.
Equipment
Wüsthof IKON Chef’s Knife; Asahi Hi-Soft cutting board; de Buyer Country Fry Pan; wooden spoon or spatula; baking dish; BlueStar range and oven.
Food safety & storage
Cook ground beef to 160°F during preparation. Refrigerate promptly and use within 3–4 days. Reheat until hot throughout. Oven reheating is preferred to restore the browned mashed-potato topping.
