Directions

  1. 1. Melt butter in a Dutch oven. Add onion, leek, carrots and celery and cook 6–8 minutes until softened.
  2. 2. Add potatoes, broth, bay leaf, marjoram and nutmeg. Bring to a boil, reduce to a simmer and cook 20–25 minutes until the potatoes are very tender.
  3. 3. Remove the bay leaf. Mash or blend about half the soup, leaving plenty of potato and vegetable pieces for texture.
  4. 4. Stir in cream and mustard. If using smoked sausage, add it now and heat through gently. Do not hard-boil after adding cream.
  5. 5. Season with salt and pepper and finish with parsley.

Food safety & storage

If adding raw sausage rather than fully cooked smoked sausage, cook it to 160°F before serving. Cool leftovers promptly and refrigerate within 2 hours.
