Directions
- Combine ground beef, onion, garlic, parsley, cumin, paprika, coriander, cinnamon, salt, and pepper. Mix gently just until evenly combined. Form into elongated kofta around skewers or shape into free-form oblong patties. Grill or cook on the BlueStar griddle over medium-high heat, turning to develop deep browning on all sides, until the centers reach 160°F. Rest briefly before serving. Serve with warm pita, tzatziki or yogurt sauce, tomato-cucumber salad, rice, or roasted potatoes.

Food safety & storage
Cook ground beef to 160°F. Refrigerate promptly and use within 3–4 days. Reheat gently until hot throughout; store sauces and fresh accompaniments separately.
