Directions

  1. Melt butter with olive oil in a Dutch oven over medium heat. Cook onion, bell pepper, and jalapeño 6 to 8 minutes until softened.
  2. Add garlic, flour, cumin, smoked paprika, and chili powder; stir for 1 minute.
  3. Add corn, potatoes, and broth. Bring to a simmer and cook 18 to 22 minutes, until potatoes are tender.
  4. Blend 2 to 3 cups of chowder until smooth and return it to the pot. Stir in milk and cream and heat gently until steaming.
  5. Season with salt, pepper, and lime juice. Serve with cilantro and green onion.

Food safety & storage

Refrigerate within 2 hours. Blend hot liquid carefully. Reheat leftovers to 165°F and avoid repeated cooling and reheating of the full pot.

Leftovers & make-ahead

Refrigerate 3 to 4 days. Reheat gently over medium-low heat, adding broth or milk if the chowder has thickened.
