Erickson Cajun Fish & Rice Bowl
A flexible Cajun rice bowl using cod as our usual fish, with tilapia or another mild white fish as an option. Make the fish normally or take it darker for a blackened-style crust.

Directions
- 1. Prepare the rice using the Erickson Stovetop Rice recipe.
- 2. Pat the fish very dry and season both sides with Erickson Homemade Cajun Seasoning or another Cajun seasoning.
- 3. Heat a cast-iron or carbon-steel skillet with a little olive oil. When placing the fish into the hot skillet, lay it away from you so any hot oil splashes away from your body.
- 4. Cook the fish normally or continue to develop a darker blackened-style crust, according to your preference. Cook until opaque, flaky, and 145°F internally.
- 5. Stir butter into the cooked rice to taste. Add Cajun seasoning to the rice according to how spicy you want the bowl.
- 6. Break the cooked fish into pieces, mix it into the seasoned rice, and serve.
